My New Favorite PowerBowl Breakfast – Superfood Oatmeal

Y’all! Can you believe I am taking about oatmeal. The tried and true boring oats that would send most running! IMG_5316

I would be the first one to head in the opposite direction if someone were to offer me a steaming bowl of grandma oats, no offense grandmas! These were my feelings until recently! We have been on a serious Oat kick! This is a protein packed breakfast that is completely plant based and vegan.  Also for my breastfeeding/pumping mamas, oats are known to increase milk supply.  I have been eating oats far before I was even pregnant in bars, granola, cookies, muffins etc. and I have to say I have had an abundance of milk. May it be related to the oats or not, either way this power bowl is the bees knees.

The oatmeal is really only half the part.  Think of this as a tutti frutti bowl with all the topping but its for breakfast…and its oatmeal.

You can really put whatever you want in there but ill share a few of our favorites.  We don’t always put all of these items in the bowl but just use this as list of options or ideas for what you can put into your PowerBowl.  Also if you have the option at your market try to get organic options for all your toppings!

Here’s the scoop!

  • Oats
  • Fruit
  • Flaxseed Meal
  • Chia Seeds
  • Maca Powder
  • Granola
  • Vegan Chocolate Chips, some things are just good for your soul…ok
  • Dried fruit (cherries, cranberries, golden raisins)
  • Dried Goji berries
  • Agave
  • Mixed nuts (walnuts, pepitas, almonds etc.)

Oats! Duh, I just use plain old-fashioned oats.  I cook ½ cup on the stovetop in a saucepan with 1 cup of water.

I bring the water to a boil, and then add the oats.  The oats call for a sprinkle of salt, but you don’t really have to use it, they come out the same.  I’d stay away from the salt if you have heart issues, high blood pressure, bloat easily. Non of us really need any extra salt in our lives, so lets just leave it out!

Stir the oats into the boiling water, bring the heat down the medium heat and cook for about 5-6 minutes. You can stir it every once in a while to make sure it stays smooth.

Our favorite is fresh fruit if we can get our hands on the in season stuff.  Berries are the best on top of these bowls.  Raspberries, blackberries and strawberries have been on repeat around here!  If you don’t have fresh available, don’t worry you can totally use frozen.  Just toss them in a few minutes before the oats are done.

I love to add a tablespoon of flaxseed meal.  Flax is loaded with fiber, omegas, protein and magnesium. It mixes right in with the oatmeal and just has a light nutty flavor.

Chia seeds are full of protein and fiber so these are no brainer to add to your PowerBowl! They turn into a gel when they are in liquid you can check out a chia seed pudding recipe here.

Maca power, is a superfood that we eat every day! Mixed in our yogurt, on our avo toasts, smoothies, or in our PowerBowls of Oats.  It is a known hormone regulator so it has been said to reduce symptoms of depression, stress, increase libido, fight free radicals, boost mood and reduce blood pressure and the list goes on!  We consume about ½ teaspoon everyday in one of those options I mentioned. Granola to sprinkle on top for a little crunch.  My favorite has been the BearNaked granola, in the vanilla almond flavor.  We also like the Kashi brands.

Vegan chocolate chips are just a little extra something to put a smile on our faces in the morning.

Dried goji berries are loaded with vitamins including vitamin C, iron, protein and antioxidants.

We also drizzle a little golden agave on the to add a little sweetness.

There are so many things you can add to make your PowerBowl your own! We like to mix a different things in and out but these all usually make the cut!
