The Best Vegan Chocolate Chip Cookies Ever!!

Who doesn’t love a simple chocolate chip cookie?!

I have to say that it’s definitely been something I’ve missed since going vegan. It’s so easy to run to the store pick up cookies from the bakery section but it isn’t so easy when you are plant based. So, I looked and looked for a recipe that wasn’t loaded with necessary ingredients. I’m not going for “fancy” here, people. I just wanted simple chocolate chip cookies! Also, I didn’t want to use any oil.

I looked at a few recipes and came up with this tweaked recipe that is super easy and delicious.

Ingredients!

(this makes a huge batch)

Being pregnant, I haven’t been wanting to cook, like ever… which is so not like me! But, making a big batch of these at a time has made us all happy. Its the perfect compliment to coffee in the morning.

3 C whole wheat flour (not packed)
2 t baking soda
1 t pink salt
1 C vegan butter
1 C brown sugar (this can be packed)
2/3C sugar

2 t vanilla extract
1 C semi-sweet vegan chocolate chips (I used Enjoy Life! Brand, it’s what we can get at walmart)
¾ C dark vegan chocolate chips (enjoy life brand)
Two flax eggs = 2 T ground flaxseed meal + 6 T water (mix together and set aside to turn to gel)

Directions

Set your oven to 350
Make your flax eggs and set aside
Mix together dry ingredients
Add vanilla, flax eggs and butter and stir/ mash until blended.
Put the dough in the fridge for 15 minutes to cool. It just makes it easier to ball up
Line a cookie sheet with foil or spray and place the little dough balls with enough space to spread out.
Cook for 15-20 minutes, and then remove to cool.
